It all starts with and depends on terroir. The identity of my wines is a meticulously calculated by nature sum of unique soils a specific microclimate, and a careful selection of grapes from noble varieties.
On twelve hectares of a limestone hill with southern exposure, I found one of the best land in Poland for growing grapes. Out of respect for the place where I live and for the sake of nature itself – my ally – I grow grapevines with the utmost care for the natural environment. The Vistula River, flowing three kilometres from here, soothes the changing, unbridled climate, and the diverse, mineral soils contribute to the complexity of the taste of wines from the following varieties: Chardonnay, Bläufrankisch, Gewürztraminer, Riesling, Pinot Blanc and Pinot Noir.

It is Pinot Noir – one of the most sensitive varieties in cultivation and vinification, elegant, full of grace, broken by slight wildness – that best reflects the unique character of Dobre’s terroir.

I believe that the extreme location of our vineyard on the wine map of the world in the era of a dynamically changing climate allows us to create unique wines. A wine with a backbone of acidity, so desired by many modern winemakers, and aromas which can develop to such a full extent during the long period of maturation and with large temperature differences between day and night. Dobre also draws its character from the atmosphere of the nearby historical town of Kazimierz Dolny. Although the bustle of the town's artistic life disappears over our piece of land, you can feel that a piece of art, the fruit of the local land, ripens every day in the silence of the limestone hill.

I listen to the terroir of the vineyard through the process of vinification – my goal is to create a wine that reflects the taste of the unique terroir. I deposit the best fruit in concrete eggs, oak vats and barrels.

The real learning and challenge is in the daily life of the vineyard
I believe in wine as a product of culture and I treat it that way. I admire wine, respect it and do not try to correct what is perfect in its natural beauty. Establishing a vineyard is for me a part of a long journey, which I started with a love of art: music and theatre.
When we, as a family, planted the first grapevines, I began to travel all over the world in search of my own style. I spent the first wine season in Austria, six months later I went to the southern hemisphere to Chile, and then I gained knowledge of oenology and viticulture in Bordeaux, at the École Nationale Supérieure Des Sciences Agronomiques. I combined my studies with an unforgettable journey to almost all wine regions of France.
Fascinated by Pinot Noir, I continued my search with a course at the Institut Universitaire de la Vigne et du Vin Jules Guyot in Dijon, focusing on the secrets of Burgundian wines.
But the real challenge is in the everyday life of the vineyard, where my beloved wife Ania supports me.

Time is our ally. While the wine quietly matures, the soft and malleable clay in Ania's hands takes on new shapes. Fired in the kiln, the clay forms, inspired by the beauty of Dobrska nature, complement the creative atmosphere of the place.
